SPEEDY MICROWAVE SPONGE PUDDING

Here’s a very simple sponge pudding that will help to cheer you up through the Winter months. It can take less than 15 minutes to prepare and cook and you can use your favourite jam or golden syrup. I like it served hot with custard or cream. This recipe is adapted from a website called All Recipes.

Ingredients.

Serves 4.

1. 50 g butter

2. 50 g caster sugar

3. 50 g self raising flour

4. 1 egg

5. 2 tablespoons milk

6. 2 tablespoons jam or syrup.

Method.

1. In a mixing bowl add all the ingredients except the golden syrup or jam.

2. Mix together with a whisk or electric mixer.

3. Grease a microwave-safe bowl and place 2 tablespoons of golden syrup or jam in the bottom of the bowl.

4. Pour the batter on top of the syrup or jam.

5. Cover and cook for 3 and a half minutes on full power, or until the pudding appears set when gently jiggled and touched lightly with a finger.

6. I serve it straight from the bowl but if you’re brave enough you can turn it out upside down on to a plate!
