Vegetarian Flatbread Pizza

This recipe is for a homemade flatbread pizza using yogurt for the base. Yogurt provides calcium and protein, and helps to enhance healthy gut bacteria which is good for our immune system. There are many other fun ways to make pizza bases including using pitta breads or a ready-made pizza base. I used wholewheat flour to make this pizza, but you can use any flour you like, such as white or buckwheat flour. You can also have fun creating your toppings: I’ll give you some ideas later in the recipe. The recipe is adapted from Amelia Freer’s website.

Makes 4 flatbreads.

Ingredients .

1. 125 g unsweetened, natural yogurt

2. 150 g self-raising wholewheat or gluten-free flour

3. A pinch of salt

4. Half a teaspoon of dried mixed herbs

5. Oil for frying.

Method.

1. Mix the flour, yoghurt, salt and herbs together in a bowl and mix it to form a dough with a big spoon.

2. Use your hands to pull it all together into a ball. Use a little extra flour if your hands get sticky.

3. Sprinkle a little flour on to the worktop and put flour on your hands too. Split the dough into four pieces. You don’t have to be exact.

4. Flatten each piece out to about half a centimetre thick or less, either with the flat of your hand or a rolling pin into roughly a round shape.

5. Heat a little vegetable oil in a frying pan on a medium-high heat and fry the flatbreads one by one for about a minute each side, turning them over with a heat-proof spatula. Put them somewhere to keep warm if possible, otherwise wrap them in a tea towel.

For the toppings.

I used leek, spinach and goat’s cheese because I like to use seasonal vegetables when possible. I chopped the leeks and cooked them with the spinach and a little butter in the microwave for 2 minutes. Then I piled this on top of the flatbread, then crumbled the goat’s cheese on top and put it under the grill for a few minutes to melt the cheese. If you prefer you could put them in the microwave for a minute to warm the topping and melt the cheese.

Other topping suggestions include: 1.Tomato, cheese and olives

2.Spring onion, watercress and blue cheese

3.Mushrooms, chicken and mozzarella

4.Tomatoes, prawns and chilli

5.Sweet potato, goat’s cheese and pine nuts.
