This is a brilliant, simple recipe for cooking flapjack in the microwave that takes less than five minutes. It is very versatile so you can add your personal twist to this basic recipe. I usually add mixed seeds, but other ideas include nuts, dried apricots, chocolate chunks or dried fruit. This recipe is adapted from a website called goodto.com
Serves 9 to 12.
Ingredients.
1. 100 grams butter
2. 75 grams light brown sugar
3. 2 tablespoons golden syrup or honey
4. 200 grams porridge oats
5. 50 grams mixed seeds or whatever addition you choose.
Method.
1. Grease a 7 inch square microwavable dish with butter. I used a round dish which makes it slightly harder to cut into portions, but still works fine. I would recommend using a square dish if possible.
2. In a large microwavable mixing bowl weigh the butter and the sugar.
3. Place the bowl in the microwave and heat on high power for 30 seconds, then stir until the butter and sugar have melted.
4. Stir the golden syrup or honey into the melted mixture.
5. Weigh the porridge oats and seeds and add those to the mixture. Stir well.
6. Tip the mixture into the greased dish. Use the back of the spoon to press it firmly into the dish.
7. Place the flapjack into the microwave and heat on high for 4 minutes. The mixture will look very soft but it will firm up as it cools.
8. Once the flapjack is cold slice it up into squares and enjoy!
