Ultimate Vegan Breakfast.
This is a delicious, healthy vegan meal that doesn’t have to be eaten for breakfast. Rosemary-roasted potatoes and tomatoes, plus garlic mushrooms and meat-free sausages, all roasted together in one baking tray, make the ultimate vegan breakfast. Serves 4.
Ingredients.
1. 450g potatoes, cut in to small chunks
2. 4 tomatoes, halved
3. 2 garlic cloves, finely chopped
4. 3 sprigs fresh or dried rosemary, finely chopped if fresh
5. 1 tablespoon olive oil
6. 300g chestnut mushrooms
7. 8 vegan sausages
8. 400g tinned baked beans
9. 150g baby spinach leaves
Method.
1. Preheat the oven to 220C/200C fan/gas 7.
2. Put the potatoes and tomatoes in a large roasting tin, sprinkle over the rosemary, a pinch of salt and a drizzle of olive oil. Bake for 15 minutes.
3. Put the garlic in a mixing bowl, add the mushrooms and a drizzle of olive oil and stir to mix.
4. Add the mushrooms and sausages to the roasting tin and roast for 20 minutes.
5. Add the beans and spinach to the roasting tin and roast for a final 5 minutes.
