What makes this casserole a little different is that it contains spelt, which is a grain similar to barley. Spelt is an excellent source of fibre and phosphorus which is important for bone and teeth development. The casserole only takes half an hour to cook, but if you choose to make it in the slow cooker it will take longer. The recipe is adapted from the Waitrose website.
Serves 2
Ingredients.
1. 1 and a half tablespoons of olive oil
2. 330 grams chicken breast chunks
3. 2 leeks, sliced
4. 1 red pepper, de-seeded and sliced (you can buy a jar of red peppers if this is easier)
5. 75 grams spelt
6. 300 ML chicken stock.
Method.
1. Heat the oil in a large saucepan and fry the chicken for 5 minutes. Add the leeks, pepper and spelt and cook for 3 minutes.
2. Stir in the stock, cover and simmer for 15-20 minutes until the chicken is cooked throughout, there is no pink meat and the juices run clear, and the spelt is tender.
3. Serve immediately.
