Super Simple Fish Pie

Here’s a wonderful, simple recipe for a fish pie that only takes minutes to make and uses breadcrumbs and grated cheese for a crunchy topping. If you want to make the recipe gluten-free, you can use mashed potato and cheese for the top. You can also add hard-boiled eggs into the pie to make it go further if you wish. Fish contains omega-3 fatty acids which are important for nervous system development and promoting good brain health.

Serves 4.

Ingredients.

1. 1 packet frozen fish pie mix

2. 2 x 350 grams tubs cheese sauce

3. Approximately 6 handfuls breadcrumbs (I use a packet of dried breadcrumbs.)

4. Approximately 6 handfuls ready-grated cheese.

Method.

1. Tip the fish pie mix into a microwave-proof pie dish and spoon the cheese sauce over the fish. Stir the sauce round the bowl so that all of the fish is covered.

2. Cook the fish in the microwave for 6 minutes, give it a stir then microwave again for a further 3 minutes. Alternatively you can put it in the oven for 30 minutes if you prefer, but if you want to save time then doing it in the microwave is quicker.

3. Mix the breadcrumbs and grated cheese in a bowl and sprinkle them over the fish pie. I use my fingertips to ensure that the whole pie is covered in breadcrumbs.

4. Put the pie on a baking tray in the oven at 200 degrees for 5 minutes until the breadcrumbs are golden and crunchy on the top. Putting the bowl on a baking tray should stop the pie from bubbling over, and if it does any liquid will go in the tray and won’t make a mess in your oven.

5. I recommend serving it with a selection of your favourite seasonal vegetables.
