At times we all need a piece of cake. I made this three-ingredient fruit cake for my brother who is off on a surfing trip, so will need the extra energy! This cake contains dried fruit which is a good source of fibre and antioxidants, especially vitamin C and vitamin A which have been shown to prevent the progression of cataracts. Vitamin C has also been associated with the prevention of age-related macular degeneration. The recipe is adapted from www.4ingredients.com.au
Makes 16 slices.
Ingredients.
1. 375 grams mixed dried fruit
2. 400 grams can condensed milk
3. 1 cup of self-raised flour.
Method.
1. Pre-heat oven to 180C. Line a baking tray with baking paper (approximate size 20 cm by 20 cm.)
2. In a large bowl place the mixed dried fruit.
3. Add the condensed milk and stir to combine. Hold the can over the bowl and wait until all the sticky condensed milk has run out and then use a spoon to get the last of it out.
4. Sift in the self-raising flour.
5. Stir to combine. It is quite a sticky mixture, so you will need to stir it for a good 5 minutes to check it’s all combined.
6. Spoon into the prepared baking tray and level off as best you can.
7. Bake in the bottom half of the oven for 40 minutes.
8. Cool before slicing.
