This is a whole meal in one pot. It is adapted from one of my favourite cookbooks: The Archers Cookbook by Angela Piper who plays the character of Jennifer in BBC Radio 4’s The Archers.
Serves 4.
Ingredients.
1. 1 tablespoon oil
2. 450 grams thick sausages (pork or vegetarian)
3. 6 rashers streaky bacon( pork or vegetarian version), cut into strips (you can use a small pack of bacon lardons if this is easier)
4. 2 leeks, washed and sliced (you can buy these ready-prepared in a bag if this is easier)
5. 2 onions, chopped (you can buy ready-chopped frozen onions if this is easier)
6. 1 tablespoon plain flour
7. 2 potatoes, unpeeled, thinly sliced
8. 1 tin chopped tomatoes
9. 2 tablespoons tomato puree
10. 300ML stock or cider.
Method.
1. In a flame-proof casserole dish or large frying pan, fry the sausages in the oil on a medium heat until the sausages are browned, about 10 minutes.
2. Take the sausages out and put to one side.
3. Add the bacon, leeks and onion to the pan and fry until the onion is soft. Add the flour to the pan and stir it into that mixture with a spoon.
4. Return the sausages to the pan with the potatoes, tomatoes and tomato puree.
5. Add the stock or cider and stir well.
6. Cover and bake in the oven at 190C/gas 5 for an hour or until the potatoes are soft when you prod them with a knife.
