Healthy Banana Split

This delicious healthy banana split can be made in 10 minutes, and is perfect for livening up breakfast or to have as a dessert. It is topped with greek yoghurt, berries, granola and runny peanut butter for drizzling. Bananas are a fantastic source of potassium, fibre and vitamins B6 and B12. Serves 1.

Ingredients.

1. 1 banana

2. 1 tablespoon greek yoghurt

3. 1 tablespoon runny honey

4. 2 tablespoons berries of your choice (optional)

5. 1 handful granola

6. 1 tablespoon cacao nibs optional)

7. 2 tablespoons peanut butter.

Method.

1. Cut the banana in half lengthwise, remove the peel and place it in a dish. If you find it difficult to cut a banana lengthwise, it doesn’t matter if you cut it in chunks, it will still taste the same!

2. Combine the greek yoghurt and honey together until smooth and well blended.

3. Use a spoon to scoop the yoghurt and honey mixture into the middle of the banana slices. Top it with berries, granola and cacao nibs (if using.)

4. Put the peanut butter in a microwave proof jug and heat it until it becomes smooth and runny., approximately 1 minute. If you struggle to get it runny, add a little butter to the peanut butter and this should help.

5. Drizzle the peanut butter on top of the banana using a spoon. Enjoy immediately.
