Cheesy fish grills recipe blog post

This recipe is a great way to eat fish if you’re not a massive fan of it, is simple to make and only takes 15 to 20 minutes preparation time. It is also full of nutrients too! This recipe is adapted from the BBC Good Food website and serves 4 people.

The ingredients you will need are:

4 chunky skinless white fish fillets such as cod, about 500 grams

4 thin slices of ham

50 grams grated mature cheddar (buy ready grated if this is easier)

2 spring onions.

For the method, do the following:

First, grease a large, shallow heat-proof dish. You can use an old butter wrapper to do this. In order to grease the dish, move your hands round it in a methodical way, ensuring to get right into the corners and edges. Don’t be afraid to feel with your fingers to check that the whole tin is greased.

Then, arrange the fillets in the dish, making sure there is a gap between each one. Put them in the oven for ten minutes.

While the dish is cooking, finely chop the spring onions. These are a bit easier to cut than average sized onions because they are smaller. When chopping, use a sharp knife that is not too large and is comfortable to hold. I personally prefer using small knives. Before chopping the onions, first top and tail them. This means cutting the top and bottom off the onion. When cutting, start at the top and work your way downwards. Chop them into small semi-circle sized chunks, it won’t matter if they’re not very fine.

Once the fish is ready, remove it from the oven with oven gloves.

Open the pack of ham and gently scrunch a slice in your hand. It doesn’t need to be exact. Place a scrunched slice of ham on each fillet, working your way along the dish methodically. If there is any ham left over after you’ve put one slice on, use this too.

Now, open the packet of grated cheese and tip into a small bowl along with the chopped spring onions. With your hands, mix the cheese and onion together in the bowl. When they are nicely mixed, sprinkle them over the fish fillets. To do this, you can either tip the contents of the bowl over the fish, or take handfuls of the cheese and onion and sprinkle them like that, whatever would work best for you. Don’t worry if little bits of cheese end up on the dish. When I made it, I found that the cheese kept falling off the fish, but it doesn’t matter because the result is that it makes it extra crispy!

At this point, season with salt and pepper if you wish.

Put the fish under the grill for 5 minutes which will help the cheese go crunchy on the top. Then, give the fish a gentle prod with a knife. If it flakes easily, then it is done and ready for serving.

I recommend serving the fish with new potatoes and a green vegetable of your choice, such as broccoli. Broccoli is full of fibre and is widely known for preventing cancer. Sit back and enjoy!
