Cheese and Potato Pie

Comfort food at its best! This recipe is incredibly simple and very cheap to make using a handful of ingredients you’re likely to have at home. You can make it even more simple by using ready-made microwave mash if you’re not a fan of peeling potatoes, or just leave the skin on the potatoes.

Ingredients.

1. 8-10 potatoes

2. A few handfuls of grated cheese

3. 1-2 tomatoes

4. 1 onion

5. A little milk

6. 2-3 tablespoons of butter

Method.

1. Peel and chop up the potatoes, although you can leave the skin on if you prefer.

2. Peel and dice up the onion and add both the onion and potato to boiling water in a saucepan on the hob.

3. Boil them for around 15-20 minutes until potatoes have softened.

4. Drain using a colander, then return to the saucepan and add in the milk and butter.

5. Mix everything together and then mash up with a potato masher.

6. You could also add a pinch of cayenne pepper, chilli flakes or chopped herbs at this stage if you like.

7. Stir in handfuls of grated cheese, as much or little as you like.

8. Transfer the mixture into a buttered pie dish, I used a large serving spoon to do this.

9. Top with sliced tomatoes or cherry tomatoes and more grated cheese.

10. Bake at 180 degrees for 15 minutes or until the cheese on top has fully melted and become golden.

11. Ideally serve with freshly steamed vegetables but baked beans would accompany it well too!
