Chilled Pea Soup

This delicately fresh pea soup is a healthy and cheap summertime meal and is a no-cook dish which makes it super easy! Peas are so good for you as they contain soluble and insoluble fibre and are packed full of nutrients as well as protein.

Serves 4.

Ingredients.

1. 450 gram bag frozen peas

2. 800 ml hot water straight from the kettle

3. 1 tablespoon vegetable bouillon powder or a stock cube

4. Small handful of chopped fresh mint

5. Cream to serve.

Method.

1. Tip the frozen peas into a blender and pour over the hot water from the kettle.

2. Leave the peas to defrost.

3. Add a handful of mint and the vegetable bouillon powder.

4. Blitz until smooth, then chill in the fridge.

5. Serve drizzled with cream and scatter with some chopped mint.
